本研究分為化學分析及動物實驗兩部分。化學分析部分在於熟悉測定三酸甘油酯之脂肪酸位置分佈之方法。經過調整脂肪脢的作用溫度、pH、濃度及作用時間,訂出脂肪脢之最適作用溫度為40℃,pH 為8,濃度為80mg/mL,作用時間為5 分鐘,如此可使三酸甘油酯之水解率達55.5%,達到測定脂肪酸位置分佈所需之水解率。本研究測得之C16:0 分佈於sn-2 之比例,在動物油高於植物油,其中豬油最高。在動物實驗部分已熟悉飼糧配製及飼養管理之細節,有待往後進行動物實驗。 Chemical analysis and animal trial are the two components of the study. The chemical analysis was conducted to determine the positional distribution of fatty acid in dietary triglycerides. Optimal hydrolysis conditions of lipase were determined as hydrolyze 50mg triglycerides at 40.degree.C, pH 8 for 5 minutes with 80 mg lipase/mL. Degree of hydrolysis could reach 55.5% and it satisfied the degree of hydrolysis for the determination of positional distribution of fatty acids. Our analyses have found that the sn-2 % of C16:0 were higher in animal fats than that of in vegetable oils with lard had highest percentage. Procedures of feed formulation and animal cares were refined for conducting further animal trials.
