    Abstract: 本論文包含兩個研究。研究一分為消化及飼養試驗,探討提高脂肪粉中單酸甘油酯 (monoglyceride; MG),碘價 (iodine value; IV) 或游離脂肪酸 (free fatty acid; FFA) 比例及添加卵磷脂,對豬隻對脂肪消化率、消化能、生長性能及屠體性狀之影響。結果顯示,將硬脂 (Stearin; SL) 中MG提高至50%,提高脂肪消化率 (P < 0.05);添加FFA至25%,提高脂肪消化率及消化能,FFA添加量增至75%則降低之 (P < 0.05)。添加6%卵磷脂與否,對脂肪酸消化率及消化能並無影響。提高IV則提高高FFA組之脂肪消化率及消化能 (P < 0.05)。提高SL中MG至50% 並添加25% FFA,提高肥育豬每日增重及飼料利用效率 (P < 0.05),與牛油者相當,且比牛油組具較低之背脂厚度 (P < 0.05)。添加6%卵磷脂,對肥育豬生長性能及屠體性狀並無影響。綜合以上,調製SL之IV為15,含50%MG及25% FFA時,可獲得最佳之效果,可提高脂肪消化率、消化能及肥育豬每日增重,並改善飼料利用效率。
    研究二分為消化及飼養兩個試驗,探討提高飼糧sn-2 脂肪酸飽和度 (sn-2 SFA) 對肉雞生長性能、脛骨性狀及脂肪及鈣消化率之影響。結果顯示,提高飼糧sn-2 SFA比例 (HS組),可提高肉雞對脂肪消化率、脛骨破裂強度、應力、骨鈣含量、腹脂C16:0及SFA含量,並降低跛腳率 ( P < 0.05)。提高飼糧中鈣含量,降低肉雞對鈣全腸道消化率 (P < 0.01)。肉雞之鈣消化率、生長性能、腹脂重及死亡率,則不受飼糧脂肪酸位置分佈之影響。棕櫚油組之總脂肪酸及飽和脂肪酸迴腸消化率與HS組相當,但較低sn-2 SFA組高 (P < 0.05)。綜合以上,提高飼糧中sn-2 SFA比例,提高肉雞對脂肪之消化率,改善腿部骨骼發育,並降低跛腳率。
    綜合研究一及二結果顯示,調整脂肪成分及sn-2脂肪酸飽和度,可提高豬及雞對脂肪之利用。
    Two studies were conducted. Digestibility and feeding trials were conducted in study 1 for investigating the effects of increasing of monoglyceride (MG), iodine value (IV) and free fatty acids (FFA) and lecithin supplementation of powder stearin (SL) on fat digestibility and digestible energy (DE), growth performance and carcass characteristics in pigs. Results showed that, increasing MG increased fat digestibility of SL (P < 0.05). Increasing FFA to 25 and 75% increased and decreased fat digestibility and DE of SL, respectively (P < 0.05). Lecithin supplementation did not further increase fat digestibility and DE. Increasing IV increased fat digestibility and DE of high FFA MG (P < 0.05). Increasing MG to 50% and FFA to 25% improved the average daily gain and gain/feed, and decreased backfat thickness of finishing pigs, and maintained similar growth performance and thinner backfat of finishing pigs than those of pigs feed tallow. Lecithin supplementation had no effect on growth performance and carcass characteristics of finishing pigs. These results showed that fat powder containing 50% MG and 25% FFA, and with IV of 15 had highest fat digestibility and DE, and growth performance and carcass characteristics in finishing pigs. <br>Digestibility and feeding trials were conducted in study 2 for investigating the effect of positional distribution of fatty acids in dietary triglycerides on growth performance, fat and calcium digestibility, tibia characteristics and leg abnormalities in broilers. Results showed that increasing dietary sn-2 saturated fatty acid (sn-2 SFA %) increased fat digestibility, force, stress and calcium content of tibia, C16:0 and SFA content of abdominal fat (P < 0.05), and decreased leg abnormalities in broilers (P < 0.05). Increasing dietary calcium decreased calcium digestibility (P < 0.01). Increasing dietary sn-2 SFA % did not affect digestibility of calcium, growth performance, weight of abdominal fat and mortality of broilers. Ileal digestibility of fat and saturated fatty acids of palm oil group was higher than low sn-2 SFA group (P < 0.05), but as the same as the ones of high sn-2 SFA group. These results showed increasing dietary sn-2 SFA % could improve fat digestibility and leg development, and decrease the leg abnormality in broilers.<br>In conclusion, manipulating fat component and sn-2 fatty acid saturation could improve the utilization of fat in pigs and chickens.<br>
